While noodles are cooking, heat cream in a heavy saucepan but do not boil. Stir in ricotta. Stir with a wooden spoon or wire whip until ricotta and cream are blended into a creamy mixture. Stir in olive oil, salt and pepper to taste, Tabasco and 1/2 cup Parmesan cheese. Mix well. Keep very hot without boiling.

Drain pasta and pour into a heated deep serving dish. Add sauce and remaining Parmesan; toss well. Serve immediately on hot plates.

Yield: 6 servings.

Spaghetti Frittata

Cooked prosciutto or smoked ham is sometimes added to this dish.
